Jimi Hendrix is most definitely worth a mention, both in terms of popularity (was huge in his lifetime and subsequently) and as important in his influence.

In all seriousness, I'd suggest Les Paul for inventing multi track recording and Raymond Scott for inventing the first synthesiser with a sequencer.  Also Gregory C. Coleman for being the drummer of the Amen break.
