Some of my perennial favourites:

Tom & Jerry: The Night Before Christmas
Only the third Tom & Jerry cartoon, but amazing how quickly they developed the 'cat and mouse' (ho ho) dynamic into something so sweet and co-dependent. Absolute must-watch every year.

Disney's Silly Symphonies: Santa's Workshop & The Night Before Christmas
Essentially a two-parter. Has that proper old-timey wooden toys and log fire Christmassy feel.

Mickey Mouse: Mickey's Orphans
Good old-fashioned Disney weirdness and chaos.

Mickey Mouse: Mickey's Good Deed
Beautiful, heart-breaking, Mickey Mouse at his most Chaplin-esque.

Bert and Ernie's Gift of the Magi
Okay, not a cartoon, and it's cut from a wider special, but I love it. The original story is brilliant and poignant, but somehow the simple good-hearted nature of Bert and Ernie makes it even more special.
