Mousse of ham and pineapple

From a Barbara Cartland recipe book.

Ingredients:
- 1/4lb ham per person
- As much pineapple as you feel like
- A glass of Madeira
- a leaf or two of gelatine

Method:
Emulsify it so you end up with a mousse at the end (ham must be cooked first).

Hopefully this gives you some inspiration for catering over the holidays period.

I missed the part about cooking the ham, how to recover?

I felt like using 87 kilos of pineapple but it doesn't seem to want to emulsify. Any ideas, Barbara?

The "glass of Madeira" has been a problem for me.
The volcanic nature of the island's rock has resulted in my blender becoming buggered-to-fuck.

Perhaps it's not emulsifying because I didn't cook the ham enough. I'll try and retrieve it from the pineapple slush in the bathtub and whack it back in the oven for a couple of weeks.

Maybe I should have only used one leaf of gelatine instead of two? Anyone know how to retrieve dissolved gelatine from pulped pineapple? Barbara can you help? I've left a voicemail, this is really serious.

The recipe is quite clear, use a leaf of gelatine to scoop it out, did you use enough pineapple as you feel like?

Have you tried using a tin of tomatos (Plum not chopped) or a bag of milk? I forget which ones supposed to help...maybe both. try both.

Listen to your heart. then add 3. don't use too much though...all I'll say is two words. "Napalm."

This could be why Barbara Cartland's Cookery Club (ATV 1974) never ran to a second series. Also the racialism.

My heart says 12 tins of tomatoes, plus three takes me to 15. Picked up a mixture of tinned and chopped from Aldi, including one with herbs. That'll set the cat amongst the pigeons!

The bagged milk is a bit of a problem though. Plentiful in Canada, apparently, but the UK supermarkets tried to push it around 2010 and it just didn't take off. I'm wondering if I should order some in from Canada and wait a week or so for it to turn up or if I should just fill my Tesco Bag For Life with bottled milk. It's a Star Wars-branded bag with Kylo Ren on it, if that makes any difference. I'd ask Barbara but she still hasn't answered the telegram I sent her last week regarding a syrup sponge.
