My favourite's still Gnasty's Loot where you get to freely fly about to your heart's content collecting thousands of gems at the end of Spyro 1.  All your web-slinging and Hang Gliding and Gravity Rushing and Infamousing and whatnot may have watered-down the effect FLYING (not gliding) had on our little ps1 era minds, but it was one of the few instances where all the effort you put in- particularly with those ridiculously oblique Turbo Charge jump sections- actually resulted in something that made it all feel worth it.
