Obviously we are still in the pandemic so it is early days for books, but I would recommend Duty of Care by Dr Dominic Pimenta, an NHS doctor who launched a charity for NHS workers during the pandemic. It really details how bad the UK government response was and gives the experience from someone working in a NHS hospital before and during lockdown.
