Cooking (lazily only writing descriptions for some of these, but definitely check out the ones without descriptions if you're interested in cooking channels):

Adam Ragusea - no-nonsense recipe videos, as well as history and science of food and cooking (Adam used to be a journalist and he usually interviews experts in his videos). https://www.youtube.com/channel/UC9_p50tH3WmMslWRWKnM7dQ/videos

Ethan Chlebowski - mostly recipe and cooking technique videos, usually breaks down recipes into an adaptable "formula", and briefly goes into the science behind some of the techniques.  https://www.youtube.com/channel/UCDq5v10l4wkV5-ZBIJJFbzQ/videos

J. Kenji Lopez-Alt - POV cooking videos demonstrating recipes that he has developed or been working on, also goes into a bit of the science; I'm pretty sure a lot of these other foodtubers have borrowed heavily from Kenji's Serious Eats articles and probably his book The Food Lab (which I haven't read). https://www.youtube.com/user/kenjialt/videos

Chef John (Food Wishes) - https://www.youtube.com/channel/UCRIZtPl9nb9RiXc9btSTQNw/videos

Alex (previously called Alex French Guy Cooking) - https://www.youtube.com/user/FrenchGuyCooking/videos

Chinese Cooking Demystified - https://www.youtube.com/channel/UC54SLBnD5k5U3Q6N__UjbAw/videos

Internet Shaquille - https://www.youtube.com/user/ltdan1504/videos

Pro Home Cooks - https://www.youtube.com/user/BrothersGreenEats/videos

Sauce Stache - experiments with making vegan meats using chemicals that will probably never be accessible to me; interesting to watch, although not everything he makes looks very appetising. https://www.youtube.com/channel/UC_oqZXtcxfJTaw1j2M1H1XQ/videos

My Name is Andong - https://www.youtube.com/channel/UCyEA3vUnlpg0xzkECEq1rOA/videos

Bad Ambassador

A couple of film related channels I watch:

Cinema Rules - two lads in their mid-20s, watching films they never seen before. Despite being quite cineliterate in terms of structure and style, there are a shocking number of films they haven't seen. They recently watched The Elephant Man, and seeing two Essex-type lads getting a bit weepy and owning it was interesting.

Blame Society - two main strands to their stuff. Welcome to the Basement is a film review show where one host hasn't seen the film before and the other might have. A very wide range of films covered (the last four were Marriage Italian Style, Rumble Fish, Godzilla (1954) and Season of the Witch (2011)), and the hosts come from a theatre background and clearly know what they're talking about. They also don't take it deathly seriously, which is nice. The other show is Beer and Board Games, where four people get together, play a different game each time and get drunk. Most of the participants are from a performing/media background, and it's very loose and shambly. Often very funny, while never obnoxious.

Sixty Symbols, Numberphile and Computerphile are all very good, informative channels featuring academics talking about physics, maths or computers respectively. They're about 10-20 minutes long and tend to focus on a particular topic within their field, and do a good job of being understandable to a layperson without dumbing down. They're all related channels (Sixty Symbols and Numberphile are done by the same guy, and Computerphile is a spinoff of Numberphile - I think all three have an association with the University of Nottingham) and sometimes you'll see academics cross over.
