Is there an alternative to the Amazon Ring that has the same basic functionality but without the whole constantly recording everything and uploading it to Amazon's servers for the police to look through whenever they feel like thing?

Still an Amazon-owned company unfortunately, but you can just plug in a USB stick and use that to store your recordings, rather than have them go into any cloud server. Before Christmas there was a bundle with the doorbell, Sync Module (basically a mini-server into which you plug the USB stick, which deals with recording and viewing) and Echo Dot for £50, so likely something along those lines will pop up again at some point.
